Flamingo Las is launching its new steakhouse with a bakery in the front, a speakeasy with its own menu, and an accomplished chef.

Bugsy & Meyer’s Steakhouse is unveiling its $10 million renovation, taking over the resort’s former Center Cut Steakhouse space. The steakhouse got its name from Benjamin “Bugsy” Siegel and business partner Meyer Lansky, who opened Las Flamingos in 1946. At the time, Hollywood brought panache as the first resort-style hotel on the resort strip.

Inside, the steakhouse offers a dry-aged meat cooler in the main dining room, a bar and lounge, a raw bar, three private dining rooms, and a hidden special known as the Counting Room.

Chicago-based Studio K worked with creative designer Jonathan Adler to create the look of the space. Adler spent 100 hours creating a custom beaded flamingo artwork. He chose art in New York City.

The Flamingo site occupies 40 acres (16 ha) of land owned by Charles “Pops” Squires, one of the first settlers of Las Vegas. Squires paid $8.75 per acre ($21.6/ha) for the land. Wilkerson was the owner of The Hollywood Reporter and some of the most famous nightclubs on the Sunset Strip: Cafe Trocadero, Syros, and La Rues (Hollywood).

In 1945, Wilkerson purchased 33 acres (13 ha) on the east side of US Route 91, or about half a mile south of the Last Frontier Hotel, in preparation for his vision. El Rancho Vegas and The Last Frontier were full-service hotel-casinos located on what was formerly known as the Las Vegas Strip. Wilkerson also requested that the new ‘Flamingo’ hotel be different from the smaller “So Joint” on Fremont Street. He planned a hotel with luxury rooms, a spa, a health club, a showroom, a golf course, a nightclub, an upscale restaurant, and a French-style casino. Due to high material costs during the war, Wilkerson ran into financial problems, running $400,000 short and hunting for new funding.
